Tender oven tri-tip

Our goal is oven at +/- 250F and internal temp at 120.At that point turn off oven and let it rise to 137F.Thats the goal,but didnt quite work out as beef wasnt truly defrosted so i had to work on temps a bit...

Got this tri-tip,choice,for 2.77/lb.

Ceramic knife from Aldi's for 6.99.SUPER for trimming as very sharp

Trimmed.Extra trim saved for grinding into lean meat for burgers

More time spent trimming,better the roast comes out

The Rub....
1 tsp black pepper
2 tsp dried oregano
2 tsp dried basil
1 tsp chili powder
1 tsp tumeric
1 tsp cummin
1 tbsp onion powder
2 tsp salt

Rub well on both sides and edges

Into very hot pan with a bit of oil,sear all sides and edges getting a crust,takes a few minutes.I then inserted BBQ thermometer probe and put pan in oven at 250F.You could use a regular manual style oven safe thermometer if you have that,just be sure you can read it without opening oven,you dont want to let heat out.

1 temp probe in meat,1 temp probe in oven for accurate oven temp,see how much it fluctuates as oven cycles on/off.Your oven may be more accurate and you dont need to monitor its temp.My oven is 1960's Kenmore gas vintage.

Into 250F oven until internal temp 120F,then turn off until internal temp of 137....that didnt work,only reached 133F,so oven back on until 138f,oven off and out at 140F.Thats still pretty rare

If I had done 135F internal and shut off on a fully defrosted roast should have hit 140F without issues.

Let rest 10-20 minutes and carve,This was a 10 minute rest,juices stayed in.Cut into 2 sections as grain runs in 2 directions.Cut across the grain

MrOwl we do like Idaho.

Ive also done the same way only cook temps 225-235 on electric smoker BBQ and 140 internal cook temp with smoke,its crazy good too.Lower the temp to get 3-4 hour cook times for the smoke.

I was going to ask if you had done it in a smoker...now I have a new recipe. What flavor wood chips do you suggest?

Ive done cherry and cherry/ hickory mix.I think any fruit or citrus tree would be good.

But the past few days has been nothing but whining about traffic and how much Big Bear sucks and how glad folks are to be moving out. I get that, but people coming up here and that live DTH need to see these conversations so they know what go’s on up here from a local’s perspective so they know what creates issues. I see it as an educational tool. I’ve been using this site since 2007 and I use it because I know I can have those conversations with other locals in an easy and quick way. Navigating deep into the website to post something that 10% of people go see is pointless in my humble opinion, but whatever man.....will do.

You're sooooo lucky! I'm out working in all this cold! Roads were still pretty icy this morning, with the freezing temperatures, we're starting to get some ice jams and running water is beginning to back up in a few areas, especially around the airport. Hope AR is ok and drying out.
