Cabin recipes

This was Sunday cabin dinner using left-over chicken.. let me know if you try it or made something similar. Always looking for something new!

Arroz con Pollo (rice with chicken).

1/2 onion diced
1/2 bell pepper diced
8 oz grilled chicken from a prior dinner (or 1/2 rotisserie chicken) shredded
1 pack taco seasoning mix
1 cup chicken broth (or stock)
2 TBSP tomato paste
1/4 cup cheddar cheese, shredded
White Rice

Sauté the onion and bell pepper in a little oil/butter on medium heat until translucent. Add Chicken and heat thru. Add seasoning mix and chicken broth/stock. Mix well, stir in tomato paste. Simmer 10 min. Mix in cheese, serve over rice. Serve with steamed vegetables (carrot, broccli, cauliflower) and a tortilla if you have them

Frozen veggies

Bought a bag of the frozen broccoli cauliflower and carrots thinking of soup/stew. Saw a recipe to toss in olive oil with salt and garlic then roast at 400 for 25 min.

Goes great with BBQ chicken and steamed rice...

One of my fav recipes, And my kids fav also; I take a whole chicken, throw out the guts, quarter a lemon and squeeze the juice inside cavity, add 2-3 T chopped garlic, liberally sprinkle Lawry,s seasoning salt & pepper and stuff with 5-6 short stems of fresh rosemary. Rub outside of chicken with olive oil and sprinkle with pepper. I use a Corningware roasting pan and bake in convection oven at 350 for app two hours or until chickens is done. It’s easy and wonderful and great for leftovers like NSA’s recipe if you hav any!
